Transcreve documentos, como a carta de Carême tecendo comentários nada lisonjeiros sobre Brillat-Savarin, e nos convida sem cerimônia para as ceias que promovia em seu Palacete Monte Cristo, revelando o segredo da receita de sua salada e reproduzindo cardápios históricos. Já em "Pequena história da culinária", a máquina do tempo de Alexandre Dumas transporta o leitor da Macieira do Paraíso à inauguração do primeiro restaurante em Paris, passando pelos gregos, Xerxes, Alexandre, Calígula, Apício e Lúculo, o Renascimento, a introdução dos talheres e das especiarias até a profissionalização da gastronomia. Dumas dá vazão a seu espírito de curiosidade e bom humor, numa conversa informal e descontraída sobre o caprichoso universo da "oitava arte".
