Israel Shahak (en hebreo: ישראל שחק) (28 de abril de 1933 - 2 de julio de 2001) fue un polaco israelí. Nacido en Varsovia, Polonia, es un sobreviviente del Holocausto. Trabajó como profesor de química en la Universidad Hebrea de Jerusalén ocupada. Es ex presidente de una asociación israelí preocupada por los derechos humanos y civiles.
