Israel Shahak (in ebraico: ישראל שחק) (28 aprile 1933 - 2 luglio 2001) è stato un israeliano polacco. Nato a Varsavia, in Polonia, è un sopravvissuto all'Olocausto. Ha lavorato come docente di chimica presso l'Università Ebraica della Gerusalemme occupata. È l'ex presidente di un'associazione israeliana che si occupa di diritti umani e civili. Era noto per le sue critiche franche al governo israeliano e alla società israeliana in generale.
