Ciò include aspetti di pianificazione e progettazione, estetica del paesaggio forestale, silvicoltura urbana, spazi blu urbani, attività ricreative all'aperto e benefici per la salute e il benessere dell'esposizione alla natura in tali aree. Anche l'accessibilità da parte di persone di diversa estrazione a tali paesaggi è stata una caratteristica della sua ricerca e pratica.
Simon ha studiato silvicoltura presso l'Università del Galles, Bangor (ora Bangor University), architettura del paesaggio presso l'Università di Edimburgo e ha conseguito il dottorato in architettura del paesaggio presso l'Università estone di scienze della vita, dove è anche professore e capo del dipartimento. dell'architettura del paesaggio.
Prima del mondo accademico Simon ha lavorato per 20 anni per la Commissione forestale, terminando il suo periodo come capo architetto paesaggista. Ha lavorato in tutto il Regno Unito e anche ampiamente su progetti di progettazione forestale e come formatore in Canada e negli Stati Uniti, nonché in Irlanda, Finlandia e Stati baltici. Quando esercitava privatamente come architetto paesaggista, ha lavorato a molti piani di progettazione del paesaggio forestale per la Forestry Commission e per società forestali private in Scozia. Dal 2012 al 2018 Simon è stato presidente del Consiglio europeo delle scuole di architettura del paesaggio (ECLAS).
